Bacon with Cooked Celery
Ingredients 4 slices of bacon in cubes 1 medium red onion, chopped 8 celery stems chopped in 7 centimeters 3 cups of chicken broth Celery seeds 2 tablespoons of shortening 2 tablespoons of flour 1 tablespoon of parsley, fresh and chopped Salt (to the taste) Pepper (to the taste)
Preparation Preheat the oven at 200 degrees C.
In a baking pan, lightly fry the bacon over medium heat for around 6 minutes, until it is golden brown. Take the bacon off the pan and put it on the side.
Place the onion on the pan and lightly fry for 5 minutes until it is soft. Then add in the celery and cook for another 3 more minutes.
Slowly add in the chicken broth and the celery seeds. Allow it to boil. Cook the vegetable mixture for around 3 minutes approximately. Then take it off the heat and cover.
Put pan inside the oven and bake for around 30 minutes, until the celery is soft.
In a small bowl, mix the shortening and flour until it turns into a soft fine paste. Keep it at normal temperature.
Take the pan out of the oven. Move the vegetable mixture onto a serving dish while keeping hot. Place the pan and cooking liquid on the heat and bring it to a boil at medium heat. Stir continuously and add in little portions of the flour and shortening mixture into it until the sauce starts to thicken.
Season to the taste and then place the sauce on top of the vegetables. Decorate it with the set aside bacon. Sprinkle the top with the parsley and serve.
