Celery Delight Recipe
Ingredients 1 kilogram of eggplants 120 grams of celery 450 grams of ripe tomatoes 1 big onion 10 green olives de pitted 2 tablespoons of capers 1 tooth of garlic 1 teaspoon of sugar 3 teaspoons of vinegar 4 tablespoons of extra virgin olive oil Salt (to the taste) Pepper (to the taste) Basil (to the taste) 1 sweet pepper
Preparation Lightly fry the onion and the garlic until they are golden brown.
Add in the tomatoes chopped and without the seeds, the celery chopped, the olives and the cappers.
Stir it all can cook for around 10 minutes.
Cut the eggplants in small squares and fry them in 2 tablespoon of hot oil. Drain them carefully and add them to the previous preparation. If you like you can also add in the sweet pepper at this point.
Mix all the ingredients together and add salt and pepper to the taste. Add in the sugar and the vinegar and sprinkle the basil on top.
Option: This dish can be served warm or cold. This is a delicious dish in the summer time since during the summer vegetables are tastier. It can be served with fish or meat.
It can also be prepared one day ahead of time and be kept in the refrigerator.
