Chicken Croquettes Recipe
Adequate for babies twelve months of age on up. Makes 8 servings.
Ingredients 300 grams of chicken breast (cooked in the oven or boiled) 50 grams of butter or vegetable margarine 50 grams of flour 250 grams of milk 1 egg Flour and breadcrumbs Salt (optional)
Preparation
- Melt the butter or vegetable margarine in a deep pan but not in an aluminum one, as this will cause the butter to burn.
- Once the butter has melted, add in the flour, stirring so that it cooks but do not allow it to brown, then add in the milk.
- Stir energetically with a whisk so that it does not turn into globs and spice it a little.
- Cook for two minutes at most, then take it off the stove and add in the previously shredded chicken. Stir and place it on the stove again so that it sticks well together and then take it off the stove.
- Stretch the dough in a plate and put it in the refrigerator for a couple hours at least, until it is completely cold.
- Make the croquettes by making long rolls and cut them to the desired size. It’s advisable to cut them very small.
- In order for the dough not to stick to the surface you are working on it will be necessary to flour the surface.
- Once the croquettes are done, dip them in the beaten egg and breadcrumbs.
- Divide the croquettes into eight servings and freeze them.
In order for them to get well cooked it will be necessary to cook them in an abundant amount of hot olive oil. Once they are golden brown, place them over a rack to strain.
