Creamy Celery Soup Recipe
Ingredients 1 tablespoon of margarine 1 cup of chopped celery 1 onion, chopped 1 potato, peeled and chopped 2 cups of chicken broth 1 and ½ cups of skim milk ¼ cup of sour cream 1 tablespoon of parsley, fresh and chopped Salt (to the taste) Pepper (to the taste)
Preparation Melt the margarine in a casserole. Then add in the celery and the onion & cook over medium heat for 5 to 7 minutes, or until the onions are soft.
Then, add in the potato and the chicken broth and cook over low heat for 15 to 20 minutes.
Next, add in the milk and season to the taste. Allow it to cool.
Mix everything in the food processor and blend until there are no lumps and it is completely smooth. If necessary, you can heat it up again.
To serve, sprinkle the parsley over it and add in a tablespoon of sour cream.
