Duck with Pineapple and Ginger

Ingredients
2 duck slices
2 tablespoons of peanut oil
Ground pepper
1 pineapple
200 grams of sugar
1 ginger root
½ cup of white vinegar
50 cl of red vinegar
50 cl of chicken broth
Salt (to the taste)
Pepper (to the taste)

Preparation
Place the duck in a bowl and allow it to sit in the peanut oil with the ground pepper for 48 hours. Turn them over every once in awhile.

Peel the ginger and cut it into fine sticks. Place them in a casserole with cold water. Place them to boil and then remove the ginger and cool it under running cold water. Then do the same again.

In a casserole, put the white vinegar and 100 grams of sugar to boil. Add in the ginger and allow it to sit for 1 hour.

Make the candy with the red vinegar and the rest of the sugar (100 grams). Stop cooking and add in the chicken broth and then add in half a pineapple. Allow it to sit for 15 minutes, then mix and strain the sauce.

Cut the other piece of the pineapple into cubes and mix it with the preserved ginger. Add in the accompaniment and the sauce. Cut the duck pieces into fine slices and cover them in sauce.

Serve with pink wine.
