Fish Croquettes Recipe
Adequate for babies twelve months of age on up. Makes 6 servings.
Ingredients 200 grams of potatoes 200 grams of fish ½ small onion ½ laurel leaf 1 egg beaten Flour and breadcrumbs Salt (optional)
Preparation
- Peel, wash and chop the potatoes in small pieces.
- Cook them with the onion and the laurel. 5 minutes before they are ready, add in the fish.
- Once everything is cooked, strain it all well and remove the laurel leaf.
- Take the fish out of the preparation and break it up into pieces.
- Prepare the mashed potatoes by blending them along with the onion; you will need to end up with a very dry mashed potatoes mixture. Then mix it in with the broken up fish pieces.
- Allow this mixture to cool for about 1 hour covered in the refrigerator.
- Prepare the croquettes by shaping them into long fish fingers and then cut them to the desired size. The smaller the better.
- Flour the surface you are going to be working on so that the fish croquettes do not stick to it.
- Once the croquettes are ready, dip them in egg and the breadcrumbs. Divide the croquettes into six servings and freeze the ones you are not going to use.
- So that the croquettes cook correctly, you will need to fry them in an abundant amount of hot olive oil. Once they are golden brown, allow them to cool over a metal rack.
This dish can be served with a salad.
