Milk Based Desserts for Children Recipes

 

Rice with Milk Recipe
Adequate for babies twelve months of age on up. 4 servings.

Ingredients
500 cc’s of milk
50 grams of rice
50 grams of sugar
½ cinnamon stick

Preparation

  1. Place the milk to boil with the sugar.
  2. Once it starts to boil, add in the rice and the cinnamon.
  3. Allow it to cook slowly for 45 minutes. It is important to stir it with a wooden spoon frequently so that it does not stick.
  4. Another way to make this dessert is to cook it covered in the oven preheated at 160 degrees C. for one hour and fifteen minutes approximately.
  5. Rice with milk will end up being very delicious if once it has been cooked, you add in a strawberry puree (50 grams of mashed strawberries per portion) or another type of fruit such as peaches, apricots, kiwi or raspberries.

Pudding Recipe
Adequate for babies twelve months of age on up. 4 servings.

Ingredients
500 cc’s of milk
3 egg yolks
125 grams of sugar
25 grams of cornstarch
½ lemon peel

Preparation

  1. Boil the milk with the lemon peel, allowing it to cook for 2 minutes so that the lemon spices it a little. Try to use the yellow part of the lemon rather than the white part of the peel as this last part has a bitter taste to it.
  2. Beat the egg yolk in a separate pot along with the sugar and the cornstarch. When it is all mixed well and creamy, add the hot milk into it and stir well with a whisk.
  3. Place the pot over the stove and continue stirring slowly, until it is about to boil.
  4. Take it off the stove and stir a little more. Divide the pudding into four different servings in individual recipients.
  5. Keep them covered in the refrigerator for no more than two days.
  6. This pudding has very few egg yolks because it has been specially designed for feeding an infant.

Flan Recipe
Adequate for babies twelve months of age on up. 5 servings.

Ingredients
500 cc’s of milk
125 grams of sugar plus an additional 75 grams
4 eggs
½ vanilla or cinnamon stick
1 lemon

Preparation

  1. You will need to prepare the burned sugar first by putting the 75 grams of sugar in a pot with 2 tablespoons of water and a few drops of lemon. Allow it to cook until it obtains a golden color; once this occurs take it off the stove. Place the sugar in the individual flan recipients.
  2. Put the milk over the stove in a pot with the vanilla or cinnamon stick and allow it to boil slowly for a couple minutes.
  3. In a separate pot (do not use an aluminum pot though as it will burn), beat the eggs and sugar with a whisk. While mixing add in the hot milk and beat for a couple more minutes so that the eggs do not cook.
  4. Pour the liquid in the flan recipients and cook over a double boiler. The water in the double boiler should cover up to half of the flan recipients.
  5. Put the flan to cook in the oven preheated at 180 degrees C. for 20 minutes. While it cooks, make sure the water is always at the same level.
  6. Once cooked, allow them to cool and keep them in the refrigerator until they are to be eaten.
  7. These can be kept in the refrigerator for up to three days.
