Potato Omelet Recipe
Adequate for babies twelve months of age on up. Makes 1 serving.
Ingredients 1 egg 80 grams of potatoes 1 tablespoons of olive oil
Preparation
- Wash the potato, peel it and cut it into very small fine pieces.
- Fry the potato in a small thick-bottomed pan with the tablespoons of oil in it. Stir well so all the potato pieces absorb the oil and allow it to cook covered for around 10 minutes. Stir every once in awhile.
- Crack and beat the egg than add in the pieces of potato.
- If you need a little more oil in the pan, add in a little more and once it is hot add in the egg mixture with the potatoes.
- Stir with a wooden spatula so that it goes cooking.
- When it is almost completely cooked, fold the omelet in half until it is well formed and cooked.
- This omelet can also be served round (this can be done by flipping the omelet with a plate).
- Then turn the stove off and cover it for a couple minutes until it has cooked completely.
When the baby is a little older you can add in a piece of chopped onion cut finely.
This meal is excellent accompanied by a salad.
